Cheese Quesadilla



Ingredients


4 corn tortillas

1/2 cup shredded cheese

1 thinly sliced medium sized tomato

1 Tablespoon olive oil

2 shredded iceberg lettuce leaves

(Serves 2)

Directions


Place one tortilla on a plate.
Spread the sliced tomato over the tortilla and then the shredded cheese.
Leave one inch around the edges of the tortilla free as the cheese spreads when being cooked and cut.
Top with another tortilla.
Heat a frying pan that is at least large enough to fit the tortilla with 1/2 tablespoon olive oil to warm the pan up on medium to low.
Place the filled tortilla onto the frying pan and cook for 2 minutes. Use a pastry brush and paint the remaining 1/2 tablespoon oil on the opposite sie.
Flip over the quesadilla over.
Once the filling has warmed and the tortillas lightly toasted-it's done. If necessary flip again watching not to burn the quesadillas. You want them to be nice and lightly brown.
Repeat the process with the second quesadilla.
Wait a minute, pry the quesadilla open just enough to put the lettuce inside and then carefully slice into pieces.
Place on a serving platter.
Great served with guacamole, sour cream and taco sauce.
